The Art of Wagashi: Crafting Exquisite Japanese Confections Masterclass is a specialized workshop designed for those passionate about learning the delicate techniques behind traditional Japanese sweets. In this masterclass, participants are introduced to the intricate process of creating Wagashi, particularly focusing on Nerikiri, the beautifully sculpted confections made from sweet bean paste and mochi.

What is Wagashi Nerikiri

Wagashi Nerikiri is a type of traditional Japanese confectionery (wagashi) known for its delicate beauty and refined taste. Made primarily from white bean paste (shiro-an) and mochi (glutinous rice flour), Nerikiri is often shaped into intricate, colorful designs that reflect the seasons, such as flowers, leaves, or fruits. These sweets are typically served during tea ceremonies because of their light sweetness, which complements the bitterness of matcha tea.

 

Nerikiri has a smooth, pliable texture, allowing skilled artisans to sculpt detailed patterns by hand or with special tools. The artistry and symbolism behind each Nerikiri design make it not only a delicious treat but also a visually stunning work of edible art.

What You’ll Learn

  • Learn how to cook Shiro-an white bean paste and koshi-an / adzuki red bean in class
  • Learn how to cook nerikiri ingredients with zero wastage calculation with simple formulas
  • Learn how to utilize tools and cutters to create design in the class and after the class
  • Learn how to create color gradients with simple and easy to follow techniques
  • Employ the traditional and contemporary methods to curate beautiful Japanese sweets
