Training Method

Throughout the duration of the training, the trainees are closely monitored and advised by a Meilleur Ouvrier de France. The trainer will teach and illustrate his exceptional skills and answer the participants’ questions. The training combines theoretical contributions in the training room and practical exercises allowing trainees to implement their knowledge and increase their professional skills and capabilities. 70% of the training time is devoted to practical applications. The trainees will be asked to create beautiful creations with attractive decorative elements.

What You’ll Learn

• Master the art of charcuterie & delicatessen
• Master the characteristics of the ingredients
• Master mixing and dosing techniques
• Master techniques to deliver fine creations
• Brioche sausage technique, usage of different meats and fishes, Pate en croute technique, Entremet, etc
• Focus on creating preservatives free recipes and using local and regional sources whenever applicable, creating original and localized flavours
• Reducing waste by using every part of the ingredients and practicing responsible portion and serving control
• Planning and preparation of products, food costing

Kindly note that all participants are required to:

  • successfully complete and submit an implementation plan for this Masterclass by course end date.
  • submit a report within 3 months from course completion.
